Excuse the occasional popping from my microphone, I am still learning the tricks of the trade here. In this official Just Chill Here video, I discuss the process of making a pork roast that is Weight Watchers friendly(ish). I made this pork roast to seal with my food saver so that I would have a meal in a couple of weeks when I start my diet. Why a couple of weeks? I’m a procrastinating fat man, that’s why!
The recipe is very simple and cheap. You will need:
A pork roast (Size does not matter)
3 Lbs of red skinned potatoes
2 cups of sliced carrots
1 cup of chopped celery
An onion cut into quarters
McCormick Pork Gravy Packets (I use these because they are so low in Weight Watcher points)
2 cups of water
Turn your crockpot on so it can warm up while you prep.
After you have chopped everything up, and your roast has thawed out, pour your gravy powder in and whisk in some water. Pour your celery and onions into the mix. Season your pork roast with whatever seasonings you like and put it in the crockpot. I change my seasonings every time I do one of these because I like to try out new flavors. This roast was seasoned with:
- 2 TBSP lemon pepper
- 1 TBSP kosher salt
- 1 TBSP crushed red pepper
- 1 TSP basil leaves
- 2 TBSP garlic
As you can see, I kept my seasonings all dry. No mustard or Worcestershire sauce (This roast came out rather delicious by the way).
Your roast is in, and you should give it 4-5 good hours of cook time. While this is happening, put your potatoes and carrots in separate pots to boil. In Weight Watchers, potatoes have points, carrots do not! If you are not worried about your weight, just toss the veggies in with the roast and save yourself the effort.
When I finished, I put 8 oz of potatoes, a half cup of carrots, a half cup of gravy, and 4 oz of pork roast into a vacuum sealable bag. This meal is 15 points, give or take. It’s pretty big too, and with the potatoes and carrots, you can check off a few of those daily vegetable requirements.
